Tomato and Basil Salad with Strawberry Balsamic Dressing

a quick and easy salad with a dressing of strawberries, balsamic vinegar and olive oil

Ingredients

  • 2 cups cherry tomatoes, washed and halved use a variety of colours if you can
  • 2 large tomatoes, washed and sliced
  • 1 handful strawberries, washed and stems removed
  • 1 handful basil leaves
  • 1/4 cup balsamic vinegar use the best quality you can
  • 1/2 cup extra virgin olive oil
  • sea salt and black pepper to taste

Instructions

  • For the dressing, blend together a couple of the strawberries with the balsamic vinegar and olive oil. Season to taste and refrigerate until ready to serve.
  • For the salad, arrange the sliced large tomatoes on the bottom of the plate, the halved tomatoes on top and sprinkle with a little salt.
  • Finely slice the remaining strawberries and arrange on top of the tomatoes.
  • Drizzle with the strawberry balsamic dressing (you won't need all of the dressing) and sprinkle the basil leaves on top. Serve immediately.

Notes

The dressing will keep in the fridge for a week.
