Pear and Pistachio Cos Salad
beautiful fresh cos leaves, sweet pears and crunchy pistachios make a lovely, simple salad

- 1 cos lettuce, washed and leaves separated
- 1 pear, washed and thinly sliced
- 1/4 cup toasted pistachios, chopped
- chives, finely chopped, for garnish
- 2 tbsp olive oil
- 1 tbsp apple cinder vinegar
- 1 tbsp maple syrup
- salt and pepper
Assemble the leaves on a flat plate, arrange the pear slices on top, then sprinkle the pistachios and chives on top.
For the vinaigrette, whisk the olive oil, apple cider vinegar and maple syrup and season to taste.
Pour the dressing on top and serve immediately.
