Pear and Pistachio Cos Salad

beautiful fresh cos leaves, sweet pears and crunchy pistachios make a lovely, simple salad

Ingredients

  • 1 cos lettuce, washed and leaves separated
  • 1 pear, washed and thinly sliced
  • 1/4 cup toasted pistachios, chopped
  • chives, finely chopped, for garnish
  • 2 tbsp olive oil
  • 1 tbsp apple cinder vinegar
  • 1 tbsp maple syrup
  • salt and pepper

Instructions

  • Assemble the leaves on a flat plate, arrange the pear slices on top, then sprinkle the pistachios and chives on top.
  • For the vinaigrette, whisk the olive oil, apple cider vinegar and maple syrup and season to taste.
  • Pour the dressing on top and serve immediately.
