For me, preparing a meal and sharing it with family and friends at home is one of life’s greatest pleasures. By providing recipes for simple, nutritious meals, I want to give people the confidence to do the same.

Mango, passionfruit & ginger granita - blend the f Mango, passionfruit & ginger granita - blend the flesh of 3 ripe mangoes with mango skin ginger syrup (mango skins & stones, a small knob of peeled ginger, 1L water and 4 Tbsp sugar, simmered in the stove & reduced to about 1 cup). Then stir in the pulp of 3-4 passionfruit. Grate a little extra ginger if you like. Freeze in a shallow tray, scraping with a fork 2-3 times to flake up the ice. Roasted carrots, hummous, dukkah & parsley flowers Roasted carrots, hummous, dukkah & parsley flowers - an easy side dish, served warm or cold. Simply drizzle  sliced carrots with olive oil & sprinkle sea salt on top, & roast for 40 minutes at 200 deg C. Serve on top of hummous, sprinkle with dukkah & your choice of herb. I made a jar of this sauce before coming on holidays. I used half of it to marinate the chicken thighs &  the remainder as a dressing for the salad.
