Pear and Pistachio Cos Salad
This pear and pistachio salad is simply an assembly of beautiful fresh cos leaves, sweet pears and crunchy pistachios. Arrange the leaves in a spiral fashion on a flat plate and nestle the pear slices on top. We’ve just planted some cos lettuce in our vegetable garden so I’m looking forward to some more home-grown salads.

Pear and Pistachio Cos Salad
Ingredients
- 1 cos lettuce, washed and leaves separated
- 1 pear, washed and thinly sliced
- 1/4 cup toasted pistachios, chopped
- chives, finely chopped, for garnish
- 2 tbsp olive oil
- 1 tbsp apple cinder vinegar
- 1 tbsp maple syrup
- salt and pepper
Instructions
- Assemble the leaves on a flat plate, arrange the pear slices on top, then sprinkle the pistachios and chives on top.
- For the vinaigrette, whisk the olive oil, apple cider vinegar and maple syrup and season to taste.
- Pour the dressing on top and serve immediately.
