Mango, passionfruit & ginger granita - blend the f Mango, passionfruit & ginger granita - blend the flesh of 3 ripe mangoes with mango skin ginger syrup (mango skins & stones, a small knob of peeled ginger, 1L water and 4 Tbsp sugar, simmered on the stove & reduced to about 1 cup). Then stir in the pulp of 3-4 passionfruit. Grate a little extra ginger in if you like. Freeze in a shallow tray, scraping with a fork 2-3 times to flake up the ice.
